Pretty Holiday Hummus: Beet It Up with Beet Hummus 0 Picture

Ingredients

  • 1 med. beet ( cook a bunch at once to have on hand)
  • 15 ounce can or 1 3/4 cup of garbanzo beans,drained and rinsed
  • 1 clove garlic
  • 1 tiny pinch of cayenne
  • 1 dash paprika
  • 2 Tbsp. lemon juice
  • sea salt and pepper to taste

Preparation

Step 1

First, roast beets: Preheat oven to 400F. Clean, scrub and remove stems and root end. Loosely wrap individually in foil, place on a roasting pan. Roast for 50 to 60 min. They're ready when a knife can be easily inserted.
You might as well wrap a head garlic and roast that also.
When the beets are done, slip the outer peel off. Combine all ing. into a food processor. Add water or additional olive oil until desired consistency. You want this to be creamy and smooth. Add salt and pepper, about 1/2 tsp. at a time.
