Ingredients

  • 4 medium Potatos
  • 1 small onion
  • 1 tsp salt
  • 1/4 cup bacon crumbled
  • 1/4 tsp pepper
  • 1 tbsp olive oil
  • 4 cups chicken stock
  • 1 cup whipping cream
  • 3/4 cup milk
  • 2 tbsp flour
  • Garnish
  • sour cream
  • grated cheese
  • green onions

Preparation

Step 1

Bake well washed potatoes on baking sheet for 1-2 hours @ 350*.
Remove from oven when done and set aside to cool enough to handle

Saute onion(finely chopped), salt and pepper in olive oil for a few minutes over medium heat.
Add stock and bring to boil, simmer for 10 minutes.
Add potatoes (cut into 1 inch cubes)and bacon to stock and simmer another 10 minutes.

Whisk together 1/4 cup of milk with flour until blended and then add the remaining milk and cream...
Add this mixture to the soup...stirring as added.

Bring to boil and simmer for 3-4 minutes...

Garnish and serve.
