Ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup shortening
- 2 eggs
- 1 cup coconut
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon butter flavoring
- 2 cups quick oats

Step 1
Cream the sugars and the shortening together. Add the eggs in one at a time and mix thoroughly. Add the vanilla and butter flavoring. Sift flour, baking powder and salt together (though Grandma Andrick just mixed them together with the sugar/egg mixture). Mix in the coconut. Add the oats and mix again. Chill the dough for at least an hour. Drop the dough by spoonfuls on a greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. When they are taken from the oven, they may look a little underdone but don't bake for more time unless you prefer a crispier cookie. Should make 3 to 4 dozen, depending on the size of the spoonfuls.
