Perfect Hard-Boiled Eggs

Perfect hard boiled eggs should have no greenish-grey ring around the yolks. The yolks should be bright yellow, not pale yellow, and the eggs should be easy to peel. If you agree, try this fool-proof method.

Step 1
Place 6 eggs in a medium-size sauce pan and add enough water to cover them by at least 1-inch. This recipe may be doubled, but be sure to use a large enough pan so that the eggs are still in a single layer and completely covered.
Bring the water to a full boil, then remove the pan and cover. Let the eggs sit in the hot water for 10 minutes (11 minutes for extra large eggs).
Place one tray of ice cubes in a medium size bowl and fill with cold water.
Remove the eggs with a slotted spoon and immerse them in the ice water to stop the cooking. Allow to sit in the ice water for at least five minutes before using or refrigerating them.
☆ To easily peel the eggs, peel them as soon as you remove them from the ice bath. Store for up to a week in the refrigerator, EITHER in a bowl of water (change the water daily) OR in a dry bowl covered with a damp paper towel.
