Ingredients

  • CRUST
  • 3 cups blanched slivered almonds (12 ounces)
  • 1/2 cup sugar
  • 5 tablespoons butter, melted
  • 1/2 teaspoons ground cinnamon
  • FILLING
  • 4 8-ounce pkgs. cream cheese, room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 4 eggs
  • GARNISH
  • fresh berries

Preparation

Step 1

CRUST

Put all ingredients in a blender, pulse until crumb crust forms. Don't over-mix or it will turn to paste. Press mixture into bottom of a 9-ounce spring form pan.

FILLING

Mix cream cheese, sugar and vanilla until blended. Add eggs. Pour mixture over crust. Bake at 350 degrees for 55-60 minutes, or until the center is set. Run a knife around inside edge of pan and let cake cool completely. Refrigerate overnight.

Garnish with fresh berries prior to serving.
