Ingredients

  • 3 c. water
  • 2 c. orzo
  • 4 Tb. olive oil
  • 1/2 c. pine nuts
  • 1 clove garlic
  • 3/4 c. fresh parsley leaves
  • juice of 2 lemons
  • 1/2 c. dried apricots
  • 1/2 c. thinly sliced scallions
  • 20 bibb lettuce leaves, (2-3 heads)
  • salt and black pepper to taste

Preparation

Step 1

1. In a small saucepan, bring lightly salted water to a boil. Add orzo and cook until soft, 8-10 minutes. Drain in a colander and rinse with cold water until cool. Place orzo in a bowl.

2. In a small saute pan, toast pine nuts with 1 tsp. of the olive oil over medium heat until golden brown, stirring often. Set aside to cool.

3. In a food processor, pulse garlic and parsley until well chopped. Add lemon juice and apricots. Pulse until apricots are in small chunks.

4. Remove mixture from processor and combine in bowl with orzo. Add scallions, the remaining olive oil, pine nuts, salt and pepper, and mix together.

5. Fill the center of each bibb leaf witha spoonful of orzo salad and serve.
