Ingredients

  • 4 lb potatoes (abt 2 LBS) peeled &
  • quartered
  • 1/4 C milk
  • 1/2 tsp salt
  • 2 TBL butter or marg. melted, divided
  • 1 egg = beaten
  • 1 C (8-oz) sour cream
  • 1 C sm-curd cottage cheese
  • 5 green onions, finely chopped
  • 1/2 C crushed butter-flavored crackers

Preparation

Step 1

cook potatoes until tender - drain
place in lg. bowl
add milk, salt & 1 TBL butter
beaat until kight & fluffy

fold in egg, sour cream, cottage cheese
& onion
place in greased 1 1/2-qt baking dish

combine cracker crumbs & remaining
butter
sprinkle over potato mixture
bake, uncovered @350 for 20-30 min or
until crumbs are lightly browned

can be made ahead & refrig.
sprinkle crumbs on top just before
baking
