Ingredients

  • 1 pkg. (10 oz.) salad greens
  • 1 cup California ripe olives or Greek olives
  • 3 plum tomatoes, cut into wedges
  • 1/2 cup thinly sliced red onion
  • 1/2 medium cucumber, peeled, cut into wedges
  • Greek Dressing (recipe below) or
  • 2/3 cup Italian Dressing
  • 1 pkg, (4 oz.) Crumbled Feta Cheese
  • GREEK DRESSING
  • 1/2 cup Olive Oil
  • 1/4 cup fresh lemon juice (1 lemon, squeezed)
  • 1 clove garlic, minced
  • 1 tsp. dried oregano leaves
  • 1/4 tsp. pepper
  • 1/2 tsp. salt or to taste
  • MIX oil, juice, garlic and seasonings.

Preparation

Step 1

TOSS greens, olives, tomatoes, onion and cucumber with dressing, Spoon onto serving platter. SPRINKLE with cheese.
