Ingredients
- l/2 pound bacon, cut into small pieces
- l/2 white onion, dice small
- 2 cups water
- 1 cup granulated sugar
- 1 cup brown sugar
- 1/2 teaspoon salt
- 1/8 cup fresh lemon juice
- 1/2 teaspoon paprika
- 2 tablespoons cornstarch
- 1/4 cup water
- 1 cup white vinegar
- 1/4 cup fresh chives, chopped small

Step 1
Saute the bacon and onion in a frying pan until cooked thoroughly. Do not drain. Add the 2 cups water, granulated sugar, brown sugar, salt, lemon juice and paprika. Cook on medium heat stirring until sugars are dissolved, then simmer for 10 minutes.
Dissolve the cornstarch in the 1/4 cup water and add to the hot mixture. Bring to a boil, then lower heat to medium and, stirring frequently, cook for 3 more minutes. Add vinegar and chives and bring to a boil again. Lower heat to medium, and cook for 3 minutes. Serve warm over spinach salad.
