  • 10 pasteurized egg yolks
  • 800 ml of whole milk
  • 4 tbsp of golden syrup
  • 1 1/3 cup of sugar
  • 2 tsp of vanilla extract
  • 8 nectarines (1 kg)
  • Juice from one lemon
  • 1 cup of water

This gelato has a slight taste of nectarine and lemon. It’s fresh and creamy! The gelato is also great for the freezer after the mix is done in the ice-cream maker, just let it stand for af bit before you serve it. It’s still perfect creamy and delicious!

Peel all nectarines and cut them into smaller pieces. Get them in a pot and pour the water in. Get it to a boil at let i simmer for 8-10 minuttes. Get them through a hand mixer and then through a strainer until all the juice is out, do not use the leftover fruitmeat.

Beat the egg yolks with the sugar until it has a creamy texture and the yellow color is almost white. Then add the syrup and stir. In with the milk, nectarine juice, lemon juice and the extract. When everything is mixed well it is ready. In the icemaker and stir until it is delicious creamy – maybe 2 portions if your machine can’t take over 2 liters, mine could not, so I made one half in the machine first and then the other one after. It should have an hour in my machine. Come if necessary the gelato in a pot and put in the freezer for an hour. Ready to serve – a delicious gelato!
