Poached Shrimp with Spicy Mayo

Ingredients
- 1/2 c. vegetable oil
- 1 1/2 Tbs. minced garlic
- 2 tsp. cornstarch
- Kosher salt
- 4 slices white sandwich bread
- 1 Tbs. olive oil or melted butter
- 1 c. mayonnaise
- 1/3 c. chopped cilantro
- 1/4 c. finely chopped scallion
- 1 Tbs. minced fresh jalapeno; more to taste
- 1 Tbs. fresh lime juice
- 2 lbs. shrimp

Preparation
Step 1
Heat the vegetable oil. Mix the garlic with the cornstarch and a pinch of salt. Put in a sieve and shake to remove excess cornstarch. Fry the garlic in the oil, until the garlic is light golden, about 1 minute. Remove from oil and drain on paper towels.
Make toasted breadcrumbs. Let cool to room temperature. Transfer to bowl and stir in 1 1/2 tsp. of fried garlic. Save remainder for the mayo.
Mayo: Blend the mayonnaise, cilantro, scallion, jalapeno, lime juice, 1 tsp. salt and remaining garlic.
Shrimp: Cook until just done. Drain.
Serve slightly warm or at room temp with the mayo and breadcrumbs.
