Ingredients
- 1 large egg white
- 1 ts vanilla
- 2 cups raw pecan halves
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1 TBS unsweetened cocoa powder
- 1 ts chili powder
- 1/2 ts kosher salt
- 1/2 ts cumin

Step 1
Preheat oven to 225. Line a baking sheet with parchment.
Whip egg white in a large bowl until frothy. Whip in the vanilla, then gently add the pecans and toss until completely coated with the mixture.
Place the remaining ingredients in a medium bowl and toss until combined.
Add the sugar mixture to the pecans, a quarter of it at a time, and gently toss the nuts until well coated.
Transfer pecans to the baking sheetand cook for 30 minuets, turning at 10 to 15 minute intervals until the coating is lightly colored and dried out, about 1 hour and 15 minutes total.
Remove from the oven, loosen nuts immediately with a metal spatula. Set aside to cool.
