Hawaiian Chicken with Cilantro infused Rice, Brocolini, Pineapple, Blackberries and Strawberries

Ingredients

  • 6 boneless, skinless, organic chicken breasts
  • 2 Tbsp. peanut oil
  • 1/2 tsp. organic garlic powder
  • salt/pepper
  • 1 can organic ring pineapple, packed in juice (Do not discard Juice)
  • 1/4 c. organic ketchup
  • 1 tsp. ground ginger
  • 2 tbsp. rice vinegar
  • 1 bunch organic broccolini, stems removed
  • 2 c. cooked jasmine rice
  • 1 tbsp. chopped cilantro
  • 1 organic lime, juiced
  • 1 pint organic blackberries, rinsed
  • 1 quart organic strawberries, rinsed, stems removed and quartered

Preparation

Step 1

1.Cook rice in a rice cooker on quick setting.
2.In a bowl, combine blackberries and strawberries
3.Preheat large frying pan. Add peanut oil and swirl to coat. Add chicken breasts. Season with salt, pepper and garlic powder.
4.Cook for 4 minutes each side.
4.Lower heat. Drain pineapple juice from can into a small bowl. Add ketchup, vinegar and ginger. Mix well.
5.Add to frying pan with chicken. Mix to coat. Add pineapple rings and brocolini to pan and cover.
6.Cook for another 3 - 5 minutes until brocolini is steamed and bright green.
7.Add chopped cilantro and lime to rice.
8.Serve one piece of chicken with 1/2 cup of rice. Spoon sauce, pineapple and brocolini over chicken and rice and fruit salad.
