Ingredients
- Chipotle Mayo:
- 1 1/2 cups mayonnaise
- 1 1/2 Tbsp lime juice
- 1 1/2 Tbsp chopped fresh cilantro
- 2 1/2 Tbsp chipotle puree
- Pinch of salt
- Fish Batter:
- 3 eggs
- 8 oz. dark beer
- 2 tsp. dry mustard
- 1 Tbsp. dark chile powder
- 1 Tbsp. salt
- 1 tsp. sugar
- 1 1/2 cups flour
- Cod
- Corn Tortillas
- Shredded Cabbage

Step 1
Chipotle Mayo:
Mix all ingredients together in a medium bowl and set aside.
Fish Batter:
Wisk eggs together in a large bowl. Add in dark beer. Wisk in dry ingredients.
Dredge cod in a little loose flour. Shake off excess. Dip in beer batter. Deep fry at 375°F until golden and cooked through. Set on paper towels to drain. Lightly salt after removing from the fryer.
To assemble the tacos, warm a corn tortilla, add a dab of chipotle mayo, fried cod and shredded cabbage.
