Citrus Rubbed Skirt Steak

Ingredients

  • 2 tsp grated lemon rind
  • 2 tsp grated orange rind
  • 1/4 tsp kosher salt
  • 1/8 tsp ground red pepper
  • 1 garlic clove, minced
  • 1 lb skirt steak, trimmed (flank steak can be substituted)
  • Cooking spray

Preparation

Step 1

Combine rinds, salt, pepper, and garlic in a bowl, stirring well. Lightly coat steak with spray. Rub rind mixture evenly over steak. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add steak to pan; cook 5 minutes on each side or until desired degree of doneness. Let stand for 5 minutes; cut steak diagonally accross grain into thin slices.
