Ingredients
- 3 large eggs
- 1 c. milk
- 1 Tb. vegetable oil
- 1 c. all-purpose flour
- 1/2 tsp. salt

Step 1
Beat first 3 ingredients at medium speed with an electric mixer until blended. Gradually add flour and salt; beating until smooth. Cover and chill 1 hour. Coat bottom of a 7" nonstick skillet with cooking spray; place over medium heat until hot. Pour 3 Tb. batter into skillet; quickly tilt pan in all directions so that batter covers bottom of pan. Cook 1 minute or until crepe can be shaken loose from skillet. Turn crepe, and cook about 30 seconds. Place on a dish towel to cool. Repeat procedure with remaining batter. Stack crepes between sheets of wax paper and place in an airtight container, if desired. Chill up to 2 days, or freeze up to 3 months.
