Tea Biscuits

Here is the recipe for tea biscuits My brother makes. The recipe isn't mine, but from a cookbook he got Mum many years ago. It is titled "Out of Old Nova Scotia Kitchens". You can purchase the cookbook online. Some really good traditional recipes in the book. In addition to the recipes, there are great stories and bits of historic trivia. Worth the purchase.

Ingredients
- 2 cups flour
- 1/2 cup shortening
- 1/4 teaspoon baking powder
- 2/3 cup milk
- 1 teaspoon salt

Preparation
Step 1
Sift together the flour, baking powder and salt. With a pastry blender or two knives, cut in the shortening quickly and lightly until the mixture resembles coarse crumbs. Stir in the milk quickly with a fork, and mix just until the dough follows the fork, around the bowl. turn out on a lightly floured board, handling gently, and knead quickly 8 or 10 times. Pat the dough to 1/2" thickness and cut with a 2" cutter, using a straight, not a twisting motion. Place on an ungreased baking sheet, setting them apart for crusty biscuits or close together, sides touching, for soft biscuits. Bake in a 450° oven for 12 to 15 minutes.
