Ingredients

  • smoked chicken:
  • 4 chicken breasts, boneless & skinless
  • tt sea salt
  • tt black pepper, freshly ground
  • salad:
  • 1 lg head of romaine OR 2-3 romaine hearts, cut into small pieces
  • 1/2 sm red cabbage, julienned
  • 1/4 red onion, julienned
  • 1 english cucumber, cut in 1/4's lengthwise, then thinly sliced
  • 1 c frozen fire roasted corn, thawed
  • 1 pint cherry or grape tomatoes
  • serve with Creamy Blue Cheese Ranch Dressing

Preparation

Step 1

Place chicken on work surface and cover with parchment paper. Pound to uniform thickness with meat mallet. Season chicken with S+P.

With indoor smoker:
Sprinkle 2 T of wood dust on bottom of smoker. Wrap bottom tray of smoker in tin foil. Place grate on top of lined tray. Place chicken on top of smoker box grate. Insert probe thermometer in chicken. Close lid to smoker and put box on medium high heat. Reduce heat to medium low when smoke appears. Smoke until chicken reaches 165 degrees. Let rest for 5 mins and dice into bite-size pieces.

Put lettuce in serving bowl. Add vegetables & chicken. Drizzle salad with a portion of dressing. Toss through and add more dressing as desired.
