Ingredients

  • 1 large flank steak (1/2 to 2 pounds)
  • Salt and pepper, for seasoning the steak before grilling
  • For the Marinade
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup sherry vinegar
  • 2 tablespoons balsamic vinegar
  • 1/4 cup water
  • 1 tablespoon ketchup
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon honey
  • 1 teaspoon sugar
  • 1/2 red onion, very finely diced
  • 1 pinch cayenne pepper
  • 1 teaspoon chopped fresh rosemary
  • 1/2 teaspoon fresh thyme leaves, chopped
  • 1/2 teaspoon pepper
