Ingredients

  • 1 1/2 cups all purpose flour, sift before measuring
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup solid, white shortening
  • 1/2 cup granulated sugar
  • 1/2 cup lgt. brown sugar
  • 1/2 tsp. vanilla
  • 1 lg. egg, well beaten
  • 1/2 cup creamy peanut butter

Step 1

Preheat oven to 350 degrees. Sift together the flour, baking soda and salt. Set aside. Cream the shortening, granulated sugar, brown sugar and vanilla in a lg. bowl until light and fluffy. Add egg and mix thoroughly. Stir in peanut butter. Add flour mixture and stir well to blend. Chill mixture in refrigerator until firm.
Forn dough into 1 in. balls and place on a baking sheet. Do not oil the baking sheet because there will be enough fat in the dough to keep the cookies from sticking. Press down on each ball of dough with the back of a fork to flatten cookie to about 1/4 in. thickness. Bake in preheated oven for 10 min. or until lightly browned. Remove from oven and cool on a rack. Makes 4 doz. cookies.
