Ingredients

  • 1 1/2 C CAKE Flour
  • 1 1/2 C Sugar
  • 8 Tbs unsalted butter, room temp
  • 1/3 C Cocoa
  • 1 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/3 C Melted Baker's Chocolate
  • 1/2 C Hot Water
  • 2 Eggs (Extra Large, room temp)
  • 1/2 C Buttermilk

Preparation

Step 1

Preheat oven to 350 degrees

In a stand mixer with the paddle, add flour, sugar, butter, cocoa, sold and powder. Mix on slow until just blended. Mix on medium for an additional minute to get batter smooth.

Stop motor and pour in chocolate. Mix one minute, then pour in hot water. Add eggs one at a time until incorporated; add buttermilk. Scrape bowl as needed.

Continue mixing for an additional minutes to make sure sugar is dissolved and everything mixed.

MAKE SURE BATTER IS 70-73 DEGREES BEFORE BAKING or cake will crown.

Bake 25-30 minutes or until sides of cake pull away from pan.

Cool for 30-60 minutes. Turn cakes out on cookie sheet lined with parchment and sprinkled with sugar to keep from sticking.
