Ingredients

  • 12 vanilla or chocolate wafers
  • 1 8 ounce package cream cheese, softened*
  • 1 3 ounce package cream cheese, softened*
  • 1/2 8 ounce carton mascarpone cheese*
  • 1/2 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla
  • 2 eggs, lightly beaten
  • 1/2 teaspoon finely shredded lemon peel
  • 1/2 teaspoon finely shredded orange peel
  • Whipped cream
  • Glazed Kumquats (optional)

Preparation

Step 1

1. Line 12 2-1/2-inch muffin cups with paper bake cups. Place a vanilla or chocolate wafer on the bottom of each bake cup. For filling: 1. In a large mixing bowl, beat cream cheese, mascarpone cheese, sugar, flour and vanilla with an electric mixer until combined. Stir in eggs, lemon peel and orange peel. 2. Pour filling into muffin cups, filling 2/3 full. Bake in a 350 degree F oven about 20 minutes or until edges are set. 3. Cool in pan on wire rack (centers will sink slightly). Remove and chill for at least 2 hours. Top each serving with a dollop of whipped cream and, if you like, a kumquat slice.
