Ingredients

  • 1 large onion, chopped
  • 2 Tbsp. vegetable oil
  • 2 cups wild rice, rinsed and drained
  • 1/2 cup currants
  • 1 bunch of scallions, sliced diagonally
  • 1/4 cup chopped pecans, toasted (OPTIONAL)
  • 1 1/2 tsp salt

1 In a large saucepan cook the onion in the oil over moderately low heat, stirring until it is softened, stir in the rice, and stir the mixture to coat the rice with the oil. Cook for 3-4 minutes.

2 Add 5 cups water and bring the liquid to a boil. Stir in the currants and salt, simmer the mixture covered, for approx. 20 minutes or until the rice is tender. Drain the rice mixture, add scallions and pecans, transfer to a bowl for serving.
