Soft Chocolate Salted Caramels

Ingredients
- 1 cup light brown sugar
- 4 tablespoons butter, unsalted
- 1/4 cup heavy cream
- 1/3 cup semi sweet chocolate chips, coarsely ground
- Maldon Salt Flakes

Step 1
1. Butter a disposable 8x8 inch baking or line a pan with buttered parchment paper, extending about 2 inches on all sides.
2. Put the ground chocolate chips in a breading pan.
3. Put the salt flakes on a small plate.
4. Bring the sugar, cream and butter to a boil, stirring gently the whole time.
5. Wash down the sides of the pan with a wet brush if crystals begin to form.
6. Cook the mixture to 225 degrees F, about 10 to 12 minutes.
7. Pour the caramel into the prepared pan and place in the freezer for 10 minutes.
8. Peel the caramel out of the pan and pull apart into hunks and roll into balls.
9. Roll the caramel balls in the ground chocolate chips.
10. Gently press the tops into the salt flakes.
11. The caramels will flatten slightly, as it is a very soft caramel.
