Ingredients

  • 2 - 16 oz. chicken broth (4 cups)
  • 2 - 14.5 oz., diced tomatoes w/ green peppers and onions (drained)
  • 2 cups diced and peeled sweet potatoes
  • 19 oz. can chick peas (drained)
  • 1/2 cup uncooked long grained rice
  • 1/2 t3ea. ground cumin
  • 1/2 tea. thyme
  • 2 cups chopped cooked turkey
  • 1/2 cup creamy peanut butter
  • 1/2 - 1 tea. crushed red pepper

Preparation

Step 1

In a large soup pot or dutch oven combine broth, tomatoes, sweet potatoes, chick peas, rice, cumin and thyme. Bring to a boil.

Reduce heat, simmer until sweet potatoes are tender and rice is cooked. (20-25 minutes).

Stir in turkey, peanut butter and crushed peppers. Cook until heated through, stirring to melt peanut butter (1-2 minutes).
