White Chocolate Meltaways

This recipe is from Family Circle. The kids love it! It calls for a cookie press, but I do it by hand. The original recipe makes cookie sandwiches; I make single cookies. Takes a while to make the shape of the cookie, but worth it.

Ingredients
- 1 cup unsalted butter, at room temp.
- 1 egg
- 3/4 cup confectioners' sugar
- 2 1/4 cups all-purpose flour
- Pinch salt
- 2 tsps vanilla extract
- 12 ozs white baking chcolate, chopped, or white kisses/melting disks
- 2/3 cup assorted nonpareils

Preparation
Step 1
Heat oven to 375 degrees.
Beat butter in medium-size bowl until creamy. Beat in egg. Add sugar, flour, salt and vanilla; on low speed, beat until well blended.
Make 2 inch long cookies.
Bake for 6 mins. until just browning around edges.
Cool on rack.
Melt chocolate in small cup over simmering water, or microwave on high for 2 mins.; stir until smooth.
Make a single cookie: spread chocolate on end of cookie and sprinkle nonpareils on top of chocolate.
Let set on rack or parchment paper.
Can refrigerate to set for a few minutes.
