Ingredients
- 25 oz. boneless, skinless chicken breast or chicken thighs
- 1 1/2 oz. sundried tomato halves, quartered (about 12) (2 carb)
- 1 1/2 cups onion, cut in thin half moons (1 carb)
- 2 cups mushrooms, thinly sliced (1 carb)
- 1/2 cup dry white wine (1 carb)
- 1 tablespoon olive oil
- 3 garlic cloves, coarsely chopped
- 1/2 teaspoon ground black pepper
- 1 tablespoon herbs de provence or italian herb blend

Preparation
Step 1
Layer chicken, tomatoes, onions, mushrooms, wine, olive oil, spices, and herbs in 3 1/2 quart slow cooker. Cover and cook on low for 5 hours.
Transfer hot chicken & sauce to shallow serving bowls. .
