- 2 cups old-fashioned oats
- 1 3/4 cups all purpose flour
- 1 Tbsp ground cinnamon
- 2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, room temperature
- 1 cup (packed) golden brown sugar
- 3/4 cup sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 3/4 cup dried currants

Step 1
1. Preheat oven to 350F. Mix oats, flour, cinnamon, baking soda and salt in medium bowl. Using electric mixer, beat butter and both sugars in large bowl until smooth and creamy. Beat in egg and vanilla. Gradually mix in dry ingredients. Stir in dried currants.
2. Drop dough by 2 Tbsp onto ungreased baking sheets, spacing 2 inches apart. Flatten into 2-inch rounds. Bake until golden and beginning to crack on top, about 14 minutes. Transfer baking sheets to racks; let cool 2 minutes. Transfer cookies to racks; cool completely. (Can be made 3 days ahead. Store in airtight container at room temperature).
