Ingredients
- 1 ¼ chopped onions
- 1 c. each red and green pepper
- ¾ c each celery and carrots
- 3 cloves garlic
- 1 Tbsp chilli powder
- 1 ½ c. mushrooms
- 1 cup cubed zucchini
- 1 can 28 oz tomatoes undrained and cut up
- 1 can 19 oz black beans, drained, rinsed
- 1 can 19 oz chick peas, drained, rinsed
- 1 can 12 oz kernel corn, undrained
- 1 Tbsp cumin
- 1 ½ tsp each: oregano, dried basil
- ½ tsp cayenne

Preparation
Step 1
1. Oil and butter. Onion, pepper (red and green), celery, carrots, garlic, chilli powder. Cook over med. heat, stirring often until veges softened ( about 6 min)
2. Add mushrooms and zucchini. Cook and stir for 4 more minutes.
3. Add tomatoes, beans, chick peas, corn with liquid, cumin, oregano, basil, cayenne. Stir well. Bring to a boil. Reduce heat to med – low. Cover and simmer for 20 min. stirring occasionally.
