- 1 C WINTER WHEATBERRIES
- KOSHER SALT
- 1 C FINELY DICED RED ONION
- 6 T OLIVE OIL, DIVIDED
- 2 BALSAMIC
- 3 SCALLIONS, MINCED, WHITE & GREEN PARTS
- 1/2 SMALL DICED RED PEPPER
- 1 SMALL DICED CARROT

Step 1
PLACE WHEATBERRIES IN 3 C BOILING SALTED WATER AND COOK OVER LOW HEAT FOR 45 MINUTES UNTIL SOFT.
DRAIN AND SAUTE ONION IN 2 T OF OLIVE OIL OVER MEDIUM-LOW HEAT UNTIL TRANSLUCENT-ABOUT 5 MINUTES.
TURN OFF HEAT AND ADD REMAINING 4 T OF OLIVE OIL AND BALSAMIC.
CONBINE WARM BERRIES, ONIONS, SCALLIONS, RED PEP, CARROT, 1/2 t SALT AND PEPPER.
LET SALAD SIT FOR 30 MINUTES. SERVE ROOM TEMP.
