Pickled Green or Grape Tomatoes

I used my home grown grape tomatoes for this recipe and each bite tastes like you are eating a spoonful of salsa. Also works well with sliced tomatoes toward the end of the season when they don't quite ripen!

Pickled Green or Grape Tomatoes 1 Picture

Ingredients

  • 2 pounds green tomatoes (about 4 or 5), thinly sliced or enough grape tomatoes (Green) to fill two jars.
  • 1 jalapeño, stems removed, cut in half lengthwise
  • 1 teaspoon cumin seeds
  • 1 teaspoon peppercorns
  • 1 teaspoon celery seed
  • 1 teaspoon dill seed
  • 2 cloves garlic, minced
  • 1 sprig cilantro
  • 1 sprig oregano
  • 1 cup white vinegar
  • 1 cup water
  • 1 tablespoon sea salt
  • 2 wide-mouth pint canning jars or 1 wide-mouth quart jar, sterilized
  • w/ lids and rings.

Step 1

Bring to a boil the vinegar water and salt. In the sterilized jars split the rest of the ingredients evenly. Pour boiled liquids into jars leaving 1/4 inch space at the top, fasten lids and process in a boil bath 10 to 15 minutes. Let cool and listen for that click that lets you know they are properly sealed.
