BARLEY****Braised barley with lemon and spices - 3 Points

I liked this very much. It was easy and fuss-free. I added some steamed broccoli spears to mine. Dan didn't care for the lemon flavour.
I could only eat about 2/3's of it though, so if making for just me, reduce the amount of barley to about 3 tbsp. - DONE
Update - I made it with just garlic, barley, salt and pepper and chicken broth and Dan loved it.

Ingredients
- Serves 2, with leftovers
- 1 cup chicken broth
- 6 tbsp. pot barley
- 1 shallot, minced
- 1/2 piece preserved lemon, rinsed and chopped - Optional
- 1 tbsp lemon juice - optional
- 1 tbsp. EVOO
- 2 - 3 sprigs fresh thyme or 1/2 tsp dried
- 1 clove garlic, minced
- 1 pinch chilli flakes or Pepper d'Espelette

Preparation
Step 1
Preheat the oven to 350°.
Combine all ingredients in a casserole dish. Cover and bake for 1 1/2 hours or until barley is tender and most of the liquid is absorbed.
Alternately, cook in small oven at 400° for 75 minutes. Remove from oven and let rest for 10 minutes.
