- Makes: 4 servings
- 1/3 cup mayonnaise
- 1 1/2 Tbsp tarragon vinegar or white wine vinegar
- 1 Tbsp sugar
- 7 cups thinly sliced green cabbage
- 1 cup grated peeled carrots
- chopped fresh parsley

Step 1
1. Mix mayonnaise, vinegar and sugar in large bowl. Add cabbage and carrots; toss to coat. Season to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate). Sprinkle coleslaw with parsley and serve.
