Ingredients
- 1 cup half and half
- 1 tablespoon cornstarch
- 8 ounces (2 cups) medium sharp Cheddar cheese, shredded

Preparation
Step 1
Place half and half and cornstarch in a medium saucepan. Whisk until smooth.
Heat over medium heat stirring constantly just until it begins to boil. Reduce heat to simmer, continuing to stir, for about 30 seconds. Remove from heat.
Immediately stir in shredded cheese and continue to stir until smooth and lovely. Serve hot, immediately.
Notes:
1. Do not use pre-shredded cheese as it has a non-clumping ingredient added, which will interfere with proper melting.
2. This queso does not reheat well. It is best served immediately. Plan accordingly.
