Ingredients
- Makes: 8 servings
- 8 slices of white bread, crusts removed
- 1 1/2 ox (40 g) low-fat spread
- 2 oz (50g) sultanas
- 1 oz (25g) soft, light brown sugar
- 2 eggs, size 3 beaten
- 1 pt (600ml) skimmed milk

Step 1
1. Slice bread in half diagonally to form 16 triangles. Coat one side with low-fat spread and arrange the slices, spread-side-up, in a lightly greased, shallow oven-proof dish.
2. Sprinkle the sultanas and brown sugar over the bread. In a small mixing bowl, blend together the eggs and milk, then pour over the pudding. Leave to stand for 30 minutes.
3. Preheat oven to 325F (160C). Cook the pudding in the oven for 45 minutes, or until risen and golden. Remove from oven and serve with fromage frais.
