Ingredients
- 1/4 C flour
- 1 tsp salt
- 1 tsp grd. black pepper
- 1 1/2 LBS boneless skinless chicken
- thighs
- 2 TBL olive oil
- 1 C chicken broth
- 1 (14oz) can quartered artichoke hearts
- drained
- 1 (3oz) pkg real bacon pieces (oscar
- mayer)
- t TBL capers
- 1 TBL lemon zest
- 2 TBL fresh lemon juice
- 2 TBL unsalted butter, softened

Preparation
Step 1
in shallow dish, combine flour, S & P
dip chicken in flour mix.
shake gently to remove any excess flour
in lg. skillet, heat olive oil over med heat
add chicken & cook for 3-4 min per side
or until golden
add chicken broth, artichokes, bacon
& capers
cover & simmer for 10-12 min or until
chicken is cooked through
uncover & stir in lemon zest, lemon
juice & butter, scraping brown
bits from bottom of pan w/ wooden
spoon
