Apple Bacon Egg Bake

Ingredients

• 3 eggs
• 1 sm. apple, diced
• 3/4 C frozen O'Brien hash brown potatoes
• thawed
• 1/3 C milk
• 1/3 C sour cream
• 1/3 C shredded cheddar cheese, divided
• 3 bacon strips, cooked & crumbled
• divided
• dash S & P

Preparation

Step 1

in sm bowl, beat eggs

stir in apples, hash browns, milk,
sour cream & 3 TBL cheese, 1 TBL
bacon, S & P

pour into 2 2-cup baking dishes coated
w/ cooking spray
sprinkle w/ remaining cheese & bacon

bake, uncovered @ 350 for 30-35 min or
until knife inserted near center
comes out clean
