Ingredients

  • 1/2 lb semisweet chocolate
  • 1/4 c rum
  • 1/2 lb (16oz) soft unsalted butter
  • 2 tbl superfine sugar
  • 2 egg yolks
  • 6 egg whites
  • 1 1/2 c (about 7 oz) ground almonds
  • pinch of salt
  • 12 Petits Beurre or Social Tea biscuits
  • whipped cream (made with 1 tbl sugar & 1 tsp vanilla)

Preparation

Step 1

1. Lightly grease a 1 1/2 qt loaf pan w/ oil, invert on paper towel until time to fill.
2. Melt chocolate & cool.
3. Break biscuits into small pieces & set aside.
4. Cream butter til light & fluffy.
5. Beat in the sugar and then the egg yolk one at time.
6. Stir in the grated almonds, rum and chocolate.
7. Whip the egg whites & salt til stiff peaks form. Stir about 1/4 of the whites into chocolate mixture. Then fold rest of egg whites into chocolate.
8. When no sreaks of white show in chocolate, gently fold in biscuits.
9. Spoon mixture into loaf pan, cover w/ plastic wrap & refrigerate for at least 4 hrs.
10. After removing from pan, frost with whipped cream.
