Ingredients
- 8 parsnips, about 900 g
- 2 tbsp olive oil
- 2 tbsp PC BLACK LABEL NORMANDY STYLE UNSALTED CULTURED BUTTER, cut in small pieces
- 1 tsp Dijon mustard
- sea salt and freshly ground black pepper
- 1 tbsp chopped fresh tarragon, optional
- 1/2 cup PC BLACK LABEL CLASSIC AIOLI WHIPPED DRESSING, optional

Preparation
Step 1
Preheat oven to 400°F (200°C). Line rimmed baking sheet with foil.
Peel parsnips, trim ends and cut in half crosswise. Cut into 1/3 inch (8 mm) thick matchsticks. In large bowl, toss together parsnips, olive oil, butter, mustard, salt and pepper.
Spread evenly onto prepared baking sheet. Roast in centre of oven for 45 to 55 minutes, stirring occasionally, or until brown and crispy.
Sprinkle with tarragon. Serve with Classic Aioli on the side for dipping.
