Ingredients
- 1/2 cup chopped onions
- 1/3 cup finely chopped red bell peppers
- 1 tsp chili powder
- 1/2 tsp ground cumin seed
- 4 cloves garlic, minced
- 1 Tbs minced canned chipotle chile in adobe sauce
- 1.5 pounds ground turkey
- 3/4 cup dry breadcrumbs
- 2/3 cup mild chunky salsa, divided
- 1 tsp dried oregano
- 6 slices bacon, cooked and crumbled feta cheese
- 2 large egg whites
- 3/4 cup finely shredded Mexican-style four cheese blend

Step 1
1 Preheat oven to 350°. Heat a large nonstick skillet over medium high heat. Coat pan with cooking spray. Add onion, bell pepper, chili powder, cumin and garlic to pan; saute 1.5 minutes or until onion is tener. Stir in chipotle chile and saute 30 seconds. Remobe from pan, cool. Combine onion mixture, turkey, breadcrumbs, 1/3 c. salsa, oregano, baon and egg shiltes in a large bowl.
2 Place half of turkey mixture in an 8 x 4 loaf pan coated with cooking spray. Arrange cheese over top, leaving a 1/2 inch border around outside edges. Arrange remaining turkey mixtue o ver cheese, pressing edges to pack. Spread the remaining 1/3 c. salsa over top of meatloaf.
3 Bake at 350° for 1 hour and 25 minutes or until a thermometer registers 165°. Let stand 10 minutes. Remove from pan, cut into 12 slices.
For muffin size, cook minimum of 40 minutes. Might be good as appetizers in mini-muffins.
