- 3 red beets, boiled
- 1 Tbs. lemon juice
- 2 Tbs. beet juice, saved after boiling
- 2 C. heavy cream
- 4 Tbs. brown sugar

Directions
Place beets in food processor. Add lemon juice and beat juice. Puree until completely blended. Beat heavy cream in large bowl and then add sugar. Whisk until forming a firm peak. Gently fold in beet mixture until smooth. Chill for 30 minutes before serving. Feel free to spread mousse on your favorite cookies.
