Stuffed Zucchini Boats

Zucchini boats filled with spinach, meats and cheeses, with a hint of garlic and topped with fresh cilantro can be a hearty side dish, or make it a meal!

Ingredients
- 2 zucchini
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 1 handful fresh cilantro
- 2 cups baby spinach leaves
- 1 cup shredded cheese of your choice, Provolone, Mozzarella, Feta, etc.
- 1 cup cherry tomatoes, halved
- 8 slices salami
- 1 avocado, sliced
- 8 slices turkey, ham or prosciutto
Preparation
Step 1
Preheat oven to 400°F.
Trim the ends off the zucchini. Slice in half lengthwise. Scoop out seeds and discard.
Place zucchini on a foil lined baking dish. Drizzle inside the boats with olive oil. Sprinkle on minced garlic. Add baby spinach, cherry tomato halves, cilantro and some cheese.
Bake for 20 minutes pull out of the oven. Top with salami, avocado, deli meat and the remainder of the cheese.
Broil for a few minutes until the cheese is melted.
Serve topped with fresh cilantro.
