Ingredients

  • Cornbread Griddle Cakes:
  • 2 c. self-rising cornmeal
  • 1 c. all-purpose flour
  • 1 1/2 c. milk
  • 1/3 c. butter, melted
  • 3 large eggs, lightly beaten
  • 1 Tb. sugar
  • 1/4 tsp. ground red pepper
  • Red barbecue sauce to taste
  • 26 plum tomato slices, (about 5 tomatoes)
  • Easy Coleslaw:
  • 6 fully cooked bacon slices
  • 3/4 c. mayonnaise
  • 1 Tb. sugar
  • 2 Tb. cider vinegar
  • 1 (16 oz.) pkg. shredded coleslaw mix
  • salt and pepper to taste
  • c. White Barbecue Sauce:
  • 1 1/4 c. mayonnnaise
  • 1/4 c. horseradish
  • 3 Tb. cider vinegar
  • 1 Tb. lemon juice
  • 1 tsp. coarsely ground pepper
  • 1/4 tsp. salt
  • Toppings: red onion slices, cracked pepper

Step 1

If your short on time, buy cornbread muffins from the deli instead of making Cornbread Griddle Cakes. Split them in half from top to bottom; use each half in place of one cake.
2 lb. warm shredded barbecued pork without sauce, (shredded barbecue beef or chicken without sauce may be substituted)
1/3 c. red barbecue sauce, (this recipe was tested with Stubb's Original BBQ Sauce)

1. Toss pork in 1/3 c. red barbecue sauce.

2. Spoon pork mixture onto Cornbread Griddle Cakes. Drizzle each with red barbecue sauce to taste. Top each with 1 tomato slice. Spoon Easy Coleslaw onto each tomato slice. Serve with White Barbecue Sauce and desired toppings.

FOR CORNBREAD GRIDDLE CAKES: Stir together all ingredients just until moistened. Pour 2 Tb. batter for each cake onto a hot, greased griddle or large nonstick skillet. Cook cakes 2-3 minutes or until edges look dry and cooked; turn and cook other side (about 2 minutes). To make ahead, place cooked griddle cakes on baking sheets. Cover and chill up to 24 hours. To reheat, bake at 300 degrees for 8-10 minutes or until thoroughly heated. Serve immediately.

FOR EASY COLESLAW: Crisp bacon slices according to package directions. Whisk together next 3 ingredients in a large bowl. Crumble bacon, and add to mayonnaise mixture in bowl. Add coleslaw mix and salt and pepper to taste; toss to coat. Cover and chill 1-8 hours. Serve with a slotted spoon.

FOR WHITE BARBECUE SAUCE: Whisk together mayonnaise and remaining ingredients in a small bowl. Cover and chill 1 hour before serving.
