Ingredients

  • 1 1/4 cups coarsely chopped tomatoes
  • 1 cup canned black beans, rinsed and drained
  • 1/4 cup loosely packed chopped fresh cilantro
  • 1 small jalapeno pepper, minced
  • 1/4 cup chopped scallions
  • 2 Tbsp. red-wine vinegar
  • 1 small clove garlic, minced
  • 1/4 tsp. dried oregano leaves
  • 1/4 tsp. salt

Step 1

In a glass bowl, mix the tomatoes, beans, cilantro, peppers, scallions, vinegar, garlic, oregano and salt.
Cover and refrigerate for at least 15 minutes to allow the flavors to blend.
