Smooth and Spicy Tomato Linguine

Ingredients
- 2 tablespoons olive oil
- 1 red onion, sliced
- 2 cloves garlic, sliced
- 1/2 to 1 jalapeno (depending on desired spice level), sliced
- 2 tablespoons tomato paste
- 1/2 teaspoon red pepper flakes
- One 28-ounce can of tomato sauce or tomato puree
- One 1-pound box of linguine pasta
- 1 tablespoon Italian or flat-leaf parsley, chopped (optional)
- 1/4 cup Parmesan cheese, grated (optional)
- Kosher salt
- Freshly crushed black pepper

Step 1
Fill a large pot with water. Add 2 tablespoons of salt and bring to a boil.Fill a large pot with water. Add 2 tablespoons of salt and bring to a boil.
In a large skillet over high heat, add olive oil and heat through. Add onion and cook until slightly browned.
Reduce heat to medium and add garlic and jalapeno. Cook until fragrant.
Stir in tomato paste and season with salt, pepper and red pepper flakes. Stir until paste coats the other ingredients.
Once paste starts to brown, add the can of tomato sauce or puree. Simmer for 10 to 15 minutes, stirring occasionally.
While sauce is simmering, add pasta to the boiling water. Cook pasta until al dente — or for two minutes less than the box recommends.
Drain pasta and toss it with the sauce until all pasta is coated.
Serve warm and garnish with parsley and Parmesan cheese (optional).
Tip: Reserve 1/4 to 1 cup of the pasta water before draining. The starchy water will help loosen a sauce that’s too thin, or bind a sauce that’s a little lacking
