Ingredients

  • 2 eggs
  • 2 pks softened cream cheese
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 1 can of cherries
  • Box of vanilla wafers or crushed graham crackers
  • (If using crushed graham crackers, must add a little butter & sugar so it can be a firm base.)

Preparation

Step 1

Combine the eggs, cream cheese, sugar and vanilla. Mix until smooth.

Place 18 vanilla wafers on bottom of cupcake holders, place in muffin pan. Watch carefully, @15 minutes at 350 degrees, take out when still light on top (they look soft but they settle, if they get brownish they are overcooked).

Once cooled, garnish with canned cherries.

Recipe makes about 18 cheesecake cups.
