- 2 large eggs
- 2 cups buttermilk, thickened
- 1/2 cup melted butter
- 1 1/2 Tbsp vanilla extract
- 1 cup unsweetened applesauce
- frosting
- 2 egg whites
- 1/4 tsp vanilla extract
- 1 cup sugar
- 1/4 tsp cream of tartar
- dash of salt
- 1/3 cup water

Preparation

Preheat oven to 375 degrees. Oil and flour cake pans and set aside.
Sift together flour, sugar, cocoa powder, baking soda and salt. Beat in eggs, buttermilk, butter and vanilla the stir in applesauce.
Pour batter into prepared cake pans and bake 20 minutes, until toothpick comes out clean. Let cake cool completely. Unmold cakes and trim tops to make them even.
To make the icing, Put egg whites and vanilla extract in stand mixing bowl and set aside.
Mix sugar, cream of tartar, salt and water in saucepan and cook on medium heat, stirring until mixture begins to boil, sugar dissolves and water evaporates. You'll notice that the bubbling will start to slow down. If you have a candy thermometer, cook until it reaches 240 degrees.
Whip egg white mixture on high speed using wire whip attachment and drizzle sugar mixture into egg white mixture. Continue beating on high speed until stiff peaks form.
Frost cake and serve.
