Ingredients

  • 3 c. boiled or steamed rice, cold, preferable day old and refrigerated
  • 1 T. soy sauce
  • 1/2 t. Accent or MSG
  • Salt and pepper to taste
  • 3 T. oil
  • 2 cloves garlic, minced
  • 1 c. frozen peas
  • 1/2 c. cooked ham or leftover roast, pork, beef or chicken or bacon, finely sliced or combination of these
  • 2 eggs, slightly beaten, cooked and scrambled
  • 3 T. scallions, finely cut

Step 1

Mix rice, soy sauce, Accent, salt and pepper. Set aside.
In hot oil, brown garlic. Add peas and meat. Stir fry a minute or two. Add rice mixture and stir, cook 5 minutes.

Mix in scramble eggs and scallions. Transfer to platter. Garnish with strips of scrambled eggs and sprinkle more scallions on top. Surround with sprig of fresh parsley.
