Ingredients

  • 8 ounces pork loin, Use Hormel Pork Roast Au Jus
  • 1/2 onion, finely chopped
  • 1/2 red pepper, finely chopped
  • 1/2 tomatoe , seeded and chopped
  • 2 tablespoons golden raisins
  • 1 tablespoon cilantro, freshly chopped
  • 1 clove garlic, minced
  • 1/4 cup chicken stock
  • 1/2 teaspoon ground cumin
  • 36 empanada wrappers
  • 1 egg white
  • 2 tablespoons bread crumbs
  • 1 tablespoon tomatoe paste

Preparation

Step 1

1. In a large saucepan over medium heat combine pork, onions, tomatoes, peppers, aisins, cilantro, garlic and tomatoe paste.

2. Add the stock and cumin and season with salt and pepper. Transfer the mixture to a food processor. Transfer to a bowl and chill.

3. Brush edges of wrappers with egg white. Place a tablespoon of filling in the center. Crimp edges.

4. Bake for 6-8 minutes at 400* until golden brown.

5. Sauce if desired: Chilli garlic sauce, mayo, and chinese mustard.
