  • 1/2 cup chopped pecans
  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 2 teas baking powder
  • 1/2 teas cinnamon
  • 1/2 teas salt

Preparation

Step 1

1. Wash and thoroughly dry a 1 pine wide mouth canning jar.

2. Layer the ingredients in the jar in this order:
salt, cinnamon, baking powder, sugar, flour, pecans.
Pressing firmly with a flat bottomed opject, such as a tart tamper or the bottom of a narrow glass, after each addition. Make the layers as level as possible.

3. Secure the lid, and decorate as desired. Attach the instructions for making the muffins found below.

INSTRUCTIONS:

Yield: 12 muffins
In addition to the contents of the jar, you will need to add the following ingredients:
1/2 cup milk
1/4 cup vegetable oil
1 egg, slightly beaten

Preheat the oven to 400. In a large bowl, blend the milk, oil, and egg. Add the contents of the jar, and stir until just mixed. Do not overstir. Spoon the batter into the greased or papered muffin tins, filling each cup two thirds full. Bake for 15 to 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool 10 minutes in the tin, remove, and cool completely. Serve immediately, or store in an airtight container for up to 1 week.
